Chore/reset version to 1.0.0 (#4)

* 🔧 chore: reset version to 1.0.0 for independent NPM package

This is a new scoped package (@sanjibdevnath/mcp-excalidraw-local),
so versioning starts fresh at 1.0.0 rather than continuing upstream's
numbering.
